I'm extremely new to this technique and no one else in the lab does it so I don't know where to go to for help, so I hope you all will be kind enough to answer some of my questions.
I've been trying to look around for just how long the probes need to be in order to do RNA ISH and came back with varying answers. One suggested a length greater than 1 KB others say it's fine if it's around 500 bp. Which is it?

Both 1 Kb and 500 bp are possible good probe. there is no absolute answer.
